When you find the spot you wanna dig click x it’s kinda like how you skin a animal. There are little raised mounds of dirt. When you cross them, the dig option pops up.
You find dig sites and stand over them. You'll get a dig prompt to press a button. It's the same thing when using the metal detector, when you're on top of the object you'll get the dig prompt.

There is a coin up by where madam nazar is rn but i can’t use it. I went to a different place to see if i could dig up a different collectible but it wouldn’t let me when i selected it in my satchel to use it. You just have to own it in order to trigger dig sites.
Just hit x/square and you automatically start digging. In a couple ranks you'll be able to see dig sites in eagle eye, but dig sites are still active now. Visit the reddeadcollector subreddit and one of the top posts is a link to a site you can use to find places to dig.
